Commercial RTV Baking Molds: Pan Fit and Wash
Commercial RTV baking molds fail on pan fit, jacket slump, and wash abrasion. Spec cavity map, master, jacket, and a food-contact article test.

If you're specifying molds for a hotel pastry kitchen, you're not buying a home catalog with bigger cartons. Commercial solutions on this site are custom RTV cavities mapped to pans you already own, jackets that don't slump at the oven you actually run, and faces that survive wash without being cut. Food-contact is still 21 CFR 177.2600 and LFGB / BfR XV. Platinum RTV is the usual chemistry. Tin-cure isn't a dual-market bakery tool. Steel LSR or HCR bakeware *parts* are a different quotation.

Pan fit, jacket, demold, wash, stack
Write the grid: cavity volume and count, center-to-center, pan envelope. The jacket is how Shore 10A-20A rubber holds a cup on a hotel pan at 190 C. A thin unsupported RTV cup that works at 170 C home bake can walk off a hotel pan. Sample on the pan, in the oven, with the batter.
Stewarding uses whatever is on the sink. If you don't write "soft cloth, no abrasive on the food-contact face," someone will use a green pad, score the face, and throw the mold out instead of recasting. Nested cups crease; jackets warp if piled wet. 177.2600 fatty use is n-hexane 175 then 4 mg/in². Don't print 230 C because a retail competitor did. Paying a tooling charge doesn't transfer the master unless the PO says so.
Common mix-up: retail muffins that "fit the pan"
A lot of hotels try a 12-cup home muffin because it sits on a bun pan. In the shop that usually means a month of service, then slump, overhang, or a scored face. The commercial product is a master cut to that pan and a jacketed platinum RTV grid.
What to ask when you're buying a hotel baking mold
- Pan drawing or envelope, cavity count, pitch, fill volume?
- Platinum RTV Shore A, jacket material, keyed split?
- Who keeps the master, and is a recast included?
- Oven temperature and fat/dry — what's tested?
- Wash: no abrasive; dishwasher only if that grade ran it?
- Nest or rack — will stewarding fold it anyway?
Worked example: 24-cavity hotel muffin
A 200-cover hotel wants a 24-cavity muffin, 50 mm cup, bun-pan envelope, about 1,500 bakes a month, US food-contact. CNC master, platinum RTV two-piece with keys, fiberglass jacket that drops into the pan they own, pigment freeze, 177.2600 on that cavity, no-abrasive on the rack tag, recast clause when a logo tears.
When this article is the wrong quote
If you need tens of thousands of identical molded silicone *cups* as SKUs, quote LSR injection with a cold-runner. Novelty banquet Bundts are a second master, not a leftover retail tool. Mesh-reinforced sheet mats are converting/HCR parts, not this RTV jacket. A tiny one-piece home tray can skip the mother mold; a huge multi-core RTV can cost more than a small compression tool.

We would not recommend raising Shore A first when the cup walks off a bun pan; fit the jacket to the pan you already own. We would not print 230 °C because a competitor did. We would not fold nested bakeware to save rack space.

FAQ
Can a hotel reuse retail silicone muffin trays if they fit the pan? Sometimes for a month. They usually die on slump, overhang, or a scored face. Tool a master to the pan and write a no-abrasive wash.
Do commercial RTV molds need a different food-contact test than home bakeware? Same named methods, different duty and specimen. A home-oven LSR spatula report doesn't cover a 24-cavity hotel RTV tray.
Platinum RTV or an LSR part tool for rack-oven madeleines? For a mold you pour batter into, platinum RTV with a jacket. LSR with a cold-runner is how you'd mold madeleine *cups* as parts.
Why do nested commercial molds crack at the fold? Thin walls stacked tall take a crease. Specify nest limits or a rack. Don't fold bakeware to store it.
Is 230 C the commercial oven spec? No. Heat limits are grade-specific. Write the oven you run. Match BfR XV duty and 177.2600 food type to that number.
